Seated Menu

Pre‐ceremony grazing platters for the Bride and Groom

Fresh fruit, yoghurt parfait, finger sandwiches, Lavosh crackers and local cheeses

 

Canapés

Cumin macaron with vegetable baji filling
Caramelised fuji apple and blue cheese crostini
Beetroot deviled quails eggs with capers, chives and broccoli sprouts
Slippery jack mushroom and walnut filo cigars
Cromesquis – black truffle and chicken liver pate croquettes
Dill and fresh horseradish lobster rolls

 

Entrée

Spring vegetable garden with hummus and olive “soil”

 

Main course

Confit chicken Maryland with sweet potato gallet, wilted kale and carrot buerre blanc

or

Crispy snapper with snake beans, lemon cucumber raita and coriander radish salad

Served with

Iceberg lettuce wedges with carrot ginger dressing, baby radish and pickled cucumber

White and wholewheat bread rolls

 

Tea and coffee service

Freshly brewed coffee and a selection of Byron Bay teas

 

Wedding cake cutting service

Your cake served with nectarines, peach coulis and whipped cream
